Our grain to glass spirits are a reflection of the Grand Valley's microclimate, warm days, cool nights, and caring community. Palisade, Colorado What is it about Palisade, Colorado? Palisade, Colorado, is a place like no other in the Centennial State. It's guarded by the Grand Mesa and the Bookcliffs, and nurtured by the Colorado River running through the middle. Nestled 4,727 or so feet up in the Colorado high desert, its unique microclimate of brilliant sunny days and cool, star-lit nights causes the fruits and grains that grow here to ripen into pure magic. We’re about as local as it gets. In fact, we can see many of the trees our ingredients grow on from our distillery door. Hot summer days give way to crisp desert nights. There is something special about this little Mesa town. Maybe it’s how the community embraces and lifts each other up. Maybe it's the Million Dollar Breeze that makes our Palisade Peaches taste priceless. Maybe it's the sunsets that you can feel in your soul. Maybe it’s those cave etchings on the edge of town. Whatever it is, you’d be hard-pressed to find a place as magical as Palisade. Tour Peach Street Distillers' working distillery in Palisade, Colorado. Pricing, tour duration, and times available here. Contact Us ## Posts Pairing Whiskey with BBQ What happens when you combine the smoky, slow-cooked perfection of BBQ with the rich, complex character of whiskey? You get the ultimate summer pairing that transforms ordinary gatherings into unforgettable culinary experiences. At Peach Street Distillers, we've crafted whiskeys that don't just pair well with BBQ—they're designed to elevate every bite, creating a harmony of flavors that makes summer gatherings truly special. Understanding the Flavor Chemistry BBQ and whiskey share a fundamental connection: both are crafted through patience, heat, and time. Just as good BBQ requires low-and-slow cooking to break down connective tissue and develop deep flavor layers, quality whiskey benefits from years of aging in charred oak barrels that impart vanilla, caramel, and spice notes. The magic of this pairing lies in how these complementary flavors interact: Smoke Meets Smoke The smoky character of both BBQ and certain whiskeys creates a beautiful harmony. Our Colorado Straight Bourbon, with its hints of caramel, vanilla, cinnamon, oak, and a subtle spiciness, complements the smoky notes from your grill or smoker. When you take a bite of charred brisket followed by a sip of our bourbon, the smoke molecules dance together on your palate, creating a unified experience. Sweet and Savory Balance BBQ sauces often bring sweetness to counteract the savory meat, much like how whiskey's natural sweetness balances its spicy, woody character. Our 5-Year Rye Whiskey, with its distinctive profile of clove, black tea, allspice, spearmint, and vanilla, plays particularly well with sweet BBQ glazes and caramelized... Both are shaped by dedication, a love of the craft, and attention to detail. And both reward you when you slow down and pay attention. At Peach Street, pairing chocolate with our bourbon and brandy isn’t about rules. It’s about discovery, contrast, and finding those “wait... wow” moments where flavors suddenly click. Whether you’re planning a cozy night in, a Valentine’s treat, or your next tasting room visit, here’s how to make chocolate and spirits shine together. Why Chocolate Works with Barrel-Aged Spirits Bourbon and brandy share natural flavor bridges with chocolate: Vanilla and caramel from oak barrels Fruit notes developed through fermentation Warm spice and lingering finishes Chocolate amplifies those qualities—or pushes back just enough to keep things interesting. How to Taste Like a Pro (Without Being One) Start simple: Take a small bite of chocolate and let it melt. Sip your spirit—not a shot, just a sip. Notice how the finish changes after the chocolate. Pro tip: darker spirits love darker chocolate, but surprises happen when you bend that rule. Bourbon + Chocolate: A Natural Love Story Milk Chocolate + Colorado Straight Bourbon Milk chocolate’s creamy sweetness pairs beautifully with Colorado Straight Bourbon. The bourbon’s vanilla, toasted grain, and gentle spice turn milk chocolate into a dessert that feels indulgent but balanced. Best for: First-time pairings, casual tastings, or bourbon-curious friends. Dark Chocolate (60–70%) + Red... Batch What You Can (Your Future Self Will... How Peach Street Brought Colorado Its First Legal Bourbon Since Prohibition Every year on December 5, we raise a glass to one of the most important—and frankly, most celebratory—dates in American spirits history: Repeal Day, the end of Prohibition. For Peach Street Distillers, nestled here in Palisade on the Happiest Block in North America, this day carries a special weight. Repeal Day isn’t just a chapter in a history book—it’s the beginning of the long road that eventually led us to produce and release the first legal Colorado bourbon post-Prohibition. And like many great Colorado stories, this one is full of grit, perseverance, and a whole lot of local flavor. A Quick Look Back: When America Went Dry In 1920, the 18th Amendment and the Volstead Act ushered in Prohibition, banning the production and sale of alcohol nationwide. Colorado, surprisingly, had already gone dry four years earlier—making it one of the earliest states to outlaw alcohol. During this period, the landscape of spirits in Colorado essentially flatlined. Breweries shuttered, wineries pulled up vines, and distillation—once an important part of agricultural communities—disappeared. Skills were lost. Equipment vanished. Generations grew up without local, legal distilling knowledge being passed down. When Prohibition finally ended on December 5, 1933, the country exhaled, but Colorado’s distilling revival didn’t immediately follow. And there’s a reason for that. After Repeal: Why Spirits Didn’t Bounce Back in Colorado Most people assume that the second the 21st Amendment was approved, America went right back to making booze. But for... Friendsgiving, Peach Street Style: Toasting Friendship and Local Flavor Friendsgiving isn’t about fancy tables or perfect timing; it’s about the people who’ve become your chosen family, gathered around mismatched chairs, sharing food, laughter, and maybe a few questionable stories from the past year. And while everyone’s debating who brought the best stuffing, there’s one thing everyone can agree on: no Friendsgiving is complete without a few good drinks. This year, celebrate friendship and local flavor with Peach Street Distillers, your go-to source for grain-to-glass spirits crafted right here in Palisade. Whether you’re hosting the main event or just bringing something to share, our Colorado-made spirits are the perfect way to raise a glass to the people who make life a little sweeter (and funnier). So before you grab a big-brand bottle off the shelf, consider bringing a true local pour to your Friendsgiving table. Set the Scene: Friendsgiving, Done Right Friendsgiving isn’t a competition — it’s a celebration. Keep it casual, keep it fun, and let... The holidays are about connection—friends dropping by unannounced, family gathered around the table, and the unmistakable sound of laughter rising above the clink of glasses. Here in Palisade, we know that the best celebrations start local: with good company, good food, and great spirits made right here in the valley. Every bottle from Peach Street Distillers starts with ingredients grown by local farmers and ends with friends gathered around the bar. Our grain-to-glass process means we handle every step, from fermentation to distillation, right here on-site. That’s what gives our spirits their depth, warmth, and unmistakable character. And when you shop local, you give twice—the gift of handcrafted quality, and the gift of supporting local agriculture, small businesses, and the community that makes Colorado what it is. So whether you’re filling stockings, hosting dinner, or planning a cozy fireside night, make this season a toast to the people and places that make it all possible. Setting the Scene: The Perfect Holiday Bar Cart A great host knows that the magic... When you visit our distillery in Palisade, you can smell our slice of Colorado in the air — the sweet, earthy scent of corn and barley from the Western Slope, the perfume of ripe fruit, and the faint hum of copper stills working their magic. Every drop we make here at Peach Street Distillers starts with raw ingredients grown right here in our backyard. From field to glass, we think that it’s the way craft spirits should be made. We call it grain to glass, and it’s the heart of everything we do. What “Grain to Glass” Really Means Other distilleries buy base spirits in bulk and blend them into finished products. Not us. At Peach Street Distillers, we make everything onsite from milling and mashing the grain to distilling, aging, and bottling by hand. Our team has been perfecting this process for 20 years, because there are no shortcuts to great spirits. “Grain to glass” means exactly what it sounds like: we start with grain from Colorado farms, add pure Rocky Mountain water, and handle every step ourselves until it’s ready to pour. Colorado Grown: The Roots of Our Spirits The Grand Valley isn’t just known for its peaches and wine. It’s a jewel of a valley growing some of the finest grains and produce in the state. We source corn, barley, and wheat from Colorado growers who share our respect for the land. The same goes for the fruit that inspires our brandies and liqueurs — peaches, pears,...
