Learn the Craft Behind the Pour

Upgrade your visit to Palisade by booking a distillery tour hosted by one of our Peach Street Tour Guides. Get an inside look at the production process from our Colorado local grain (and fruit) to your glass. We’ll wrap up with a sampling of our Colorado Straight Bourbon from its White Dog infancy to its 5 Year aged Single Barrel expression.

About the Distillery Tour

What’s included

Tour and overview of the production process from mashing to bottling, sample flights, and Q&A with a distilled spirits expert.

Overview

Distillery tours are roughly one hour in length with around 45 minutes on the floor discussing our mashing, fermenting, distilling, bottling & barrel aging techniques as well as some company history and Palisade stories. The remaining 15 minutes will be spent at the pergola outside of our Rickhouse, tasting some various ages and proofs of our Colorado Straight Bourbon. The sampling flight will include three 1-oz samples of Colorado Straight Bourbon, Barrel Strength Colorado Straight Bourbon, and 5 Year Aged Single Barrel Colorado Straight Bourbon. You’ll be able to keep your tasting glass at the end of the flight as a memento.

Tours are for those aged 21 and up only.

Tour Schedule

Starting around 3:30 daily, we will make an announcement in the pub and happily add “walk-up guests” to fill the tour up to a capacity of 20 people, but we reserve the right to cancel a tour on any given day if there are no prepaid guests that have booked ahead as of the morning of the tour.

Safety Requirements

Distillery tours require closed-toed shoes, and we may ask guests to wear eye protection based on what distillery operations are active that day. We will provide safety glasses as needed.
